If your staff are properly trained and knowledgable you are likley to be running a more successful business. Many Local Authorities give Excellence Awards to premises that they find to be excelling in all areas of food safety  - customers can use this as a benchmark of quality.

CIEH Level 2 Award

The most popular of our Food Safety courses is The Chartered Institiute of Environmental Health (CIEH) Level 2 Award in Food Safety in Catering. This is a one day course with 6 hours tuition and a multiple choice test at the end. To pass delegates must get 20 out of 30 questions correct. This course can be split over two or even three days as long as the tuition is completed and the test undertaken at the end of it under correct conditions. This qualification will allow you to work in any area of the food business and demonstrates to inspecting bodies, employers and other employees that you and/or your staff have achieved competency. Environmental Health Officers recognise this as good training.

The course comprises:-

  • Introduction to food safety
  • The law
  • Food safety hazards
  • Taking temperatures
  • Refrigeration, chilling and cold holding of food
  • Cooking, hot holding and re-heating of food
  • Food handlers
  • Principles of safe storage
  • Cleaning
  • Food premises and equipment 

CIEH Level 3 Award

This is a 3 day course designed for supervisors and managers within a food handling environment. We can run it on consecutive days in a single week or on one day a week for three consecutive weeks (recommended). The course handles all aspects of food safety in greater depth than the Level 2 Course and is a must if you are a supervisor or manager responsible for staff who regularly handle high risk foods. Further Course details are available on enquiry.

Courses designed for your business

If you wish your staff to obtain either of the above qualifications but would like it tailored to your particular operation - we can come along and take photos and personalise your presentation. We can also visit your premises whilst you are operational and observe how you do things incorporating this into you personalised course.   

Refresher Food Safety (in house course)

Half day course for staff who need to renew a Level 2 Award. Must have completed Level 2 Award within the last 3 years. 

HACCP Course (Hazard Analysis and Critical Control Points)  -  1 day with follow up visit

Designed for businesses and staff that need a fully documented HACCP (Food Safety) system. We will visit your premises and advise you of your needs, taking into account the nature of your business, the risks and the controls required. We will then train your staff in its operation. Suitable for medium to large operations, businesses with complex requirements, manufacturing, butchers, pub/restaurant chains, hotels etc.

SFBB Implemetation (Safe Food Better Business)  -  1 day with follow up visit

It is a legal requirement to have a documented food safety system within every food business 

Safe Food Better Business is a food safety system that requires minimal time and effort to be successful. All local authorities are now accepting this system as a practical system that works. It comprises a pack that you fill in about your business and the way you operate, and a simple diary. This system is suitable for most small businesses - shops, gargages, pubs, take-aways, cafes, burger vans, ice-cream kiosks, small restuarants/ hotels, tea rooms, sandwich shops etc. 

We will obtain a pack for you (free from the Food Standards Agency) and show you how simple it is to use, coach your staff on implementation and practical day to day use, and show you how and when to monitor and what to do if things go wrong.
